
Mattingly Cold Storage commissioned Tippmann Innovation (Ti) to conduct freezing and tempering tests with Ti’s patented QF+ In-Rack Freezing System recently.
The purpose of the tests was to evaluate freezing and tempering times against traditional blast freezing and tempering methods. Faced with the challenge of a 72-hour freeze time for pork, Mattingly hoped to reach temperatures of 0° F in 48 hours or less while operating a –10° F freezer.
Data from the Ti test demonstrated that the QF+ system allowed Mattingly to reach desired freezing and tempering goals and increase product turn rates. Due to the remarkably effective test results, Mattingly added QF+ to its Zanesville OH facility.
